MONTE DE SANTA ANA is the selection of the best batches of our FERGUA EVOO from the first productions, the olive being slightly green, which gives it a more fruity flavor.
It is an EVOO made with varieties of native olives from the Jumilla region, mainly Arbequina, Manzanilla, Cornicabra and Picual. The extraction is carried out cold and by exclusively mechanical means to preserve all the flavors and aromas that the fruits have and selected from the best batches obtained from the first productions.
The result of this selection results in an EVOO with exceptional qualities, visually it has a yellow tone with more intense greenish tones than our FERGUA EVOO and in the mouth, a very balanced flavor, with a fruity flavor, a medium bitterness and a spiciness of medium intensity, it is an oil that invites consumption raw.
